FEDESI is six cooperatives that joined together in 2015: close to 3,000 farmers across the Sierra Madre in Chiapas, most working around two and a half hectares between 1,200 and 1,700 metres above sea level. The cherry is floated, pulped, fermented in cement tanks for ten to sixteen hours, then dried on the patio for five to ten days, the caffeine comes out later, using nothing but water.

The Mountain Water Process (MWP) is a decaffeination method originating in Mexico that uses pure water from the glaciers of the highest mountains in Mexico. This method is celebrated for its natural, chemical-free approach, which maintains the integrity of coffee’s delicate flavour compounds while removing caffeine.
