On the sun-kissed slopes of Fazenda Inhame in Brazil, this micro-lot begins with careful eyes and patient hands. Here, the cherries are harvested at their fullest ripeness from high-altitude plots, where each cluster of bright fruit is a promise of sweetness.

Rather than rushing, the fruit is placed into large tanks and fermented for 90 hours, a long, intuitive process that deepens complexity and lets nature's own rhythms shape the beans.

After fermentation, the cherries are spread across raised patio beds to dry gently under open skies until they reach perfect balance. Then, they rest in wooden boxes for a month, allowing flavors to settle and bloom - a slow journey from farm to cup that mirrors the dedication of the people who grow it
