Sourced from smallholder farms across Colombia, averaging three to four hectares at 1,400 to 1,900 metres above sea level. Colombia’s range of climates and altitudes means that somewhere in the country, harvest is always happening.

The caffeine comes out using a compound made by fermenting sugarcane. The beans are dampened, the liquid runs through them, and the compound attaches itself to the caffeine and carries it out, leaving the sugar, the acidity and most of the flavour behind. What’s left is steamed off. The sweetness people notice in this cup isn’t added by the process. It’s what’s still there once the caffeine is gone.
