High in the Apaneca-Ilamatepec mountains of El Salvador lies Finca Las Brisas, a farm first planted in 1984 by producer Angel Cabrera. Here, at 1 200–1 500 meters, rows of H-2 Hybrid trees thrive in rich volcanic soil. This variety born from Caturra and Timor was chosen for its resilience, but over the years it has revealed a remarkable cup profile. After careful harvesting, cherries undergo anaerobic fermentation, a method that heightens fruit intensity and depth. The result is a vibrant coffee with notes of dark chocolate, ripe red fruit, and warming spice, a taste that carries both the mountain terroir and Cabrera’s dedication.
